When is a choccy chip cookie at its most awesome! When it’s made with love and served warm with melting chocolate.
These guys are super simple and take 15 mins from the idea to eventuation… (That is definitely a real word!)
Note that like anything sweet, they aren’t going to be fructose friendly if you eat half the mix before they make the oven!!!!
Preheat oven to 180C fan forced. Or 200C without.
3/4 C sugar (I use half half sucrose/ glucose)
1 tsp vanilla bean paste (less baddies than vanilla essence but either will do)
1 packet chocolate chips (Cadbury real dark chocolate baking chips only have sugar as a bad ingredient)
Add 2 cups of gluten free flour mix
1 tsp zanthum gum
1 heaped tsp of baking powder (gf)
Roll out into small balls and squash with fingers into the desired shape.
Bake for 12 mins or until golden. They will harden when you get them out.
variations; reduce by 1/2 C flour and add 1/2 C of rolled oats ( if you want fructose free and not necessarily gluten free), and half a cup of sesame/sunflower seeds/ pumpkin seeds (pepitas)/ almond flakes.
Add half a cup of fructose free muesli in place of the above- try ‘table of plenty nicely nutty muesli’
