A deliciously easy breaky/lunch in under 5 minutes?
Scramble an egg with a TSBp of milk (if its taking you more than 2 mins in a hot pan you’ve probably got yourself a solid omelette)
Toast some gluten free bread (I have discovered the ‘country life -gluten free’ range, edible and sandwich worthy)
a nice dolop of lite cream cheese on top
some smoked salmon, plain variety
and top with a teaspoon of capers
