Delicious rice crust quiche!!!

Here’s one for all of those that want to make pastry encrusted goodies but would prefer not to eat pastry or really can’t make pastry!

Easiest yummiest quiche in no time.

ingredients

1C rice (any variety of white)
1.5 C water
2Tsp of grated Parmesan cheese

5 eggs (1 for rice mixture)
1/3 C of sour cream
1/2 C grated cheese
1 tsp Dijon mustard
Salt
Pepper

2 C of Veges/ filling
Any of :

Spinach
Capsicum red
Bacon
Olives
Broccoli (currently testing this one for safeness… Let me know)
Etc

Microwave the rice and water for 12 mins.
Preheat oven to 180 deg C.
Mix cooked rice with one egg and the Parmesan Cheese.

Press the rice into a flan tin, mould edges into a lip. Flatten using the back of a wet spoon. Press the edges down with wet fingers and spoon to form into a 1 cm lip.

Once you have pressed the rice into the tin, bake at 180 for 15-20 mins, or until the rice has a light colouration to it.

Mix the eggs, dijon mustard, salt, pepper and cheese in a bowl. Chop and arrange the vegetables/fillings within the rice crust.

Pour over the egg mixture and put it back in the oven. Cook for 20-25 mins or until the egg mixture has set and the crust is golden.

I cooked a vegetarian version of the quiche this time, but an alternative is to do a bacon and egg pie! Meerly substitute the veges for bacon pieces and pour over the egg mix. I would also leave out the mustard and replace the sour cream with light thickened cream.

Johnny cash stepped right out of walk the line, did a ‘Benjamin Button’ of 10 years anti-ageing and stepped foot onto the polished concrete floor of “Quint”. Amid the  comfy retro  furniture ‘Johnny’ coolly went about his business serving up amazing coffee complete with a smooth nutty flavour, and nailing the fructose free options that adorned quint’s menu.

Let me add that there are standards on the menu that include (lactose and GF… together)! So I went about changing their menu and serving up a fructose free number for a weekday lunch date. The once lactose and GF quinoa porridge with poached rhubarb was rocking mouthwatering thoughts and a few adjustments later ‘Johnny’ flashed us a no worries kind of a smile. Quinoa porridge made with milk rather than the coconut milk on the menu (brown sugar and honey free, minus pistachios). Ok so technically I forgot to ask for no pistachios as I was super excited, but no-one seemed to notice me pick them off the top.

Its the type of place that doesn’t realise it’s in the middle of little vietnam. Its too cool to be caught up in the bustle. The type of place that couldn’t care less that you have taken an hour to order lunch because you are too busy catching up on stories of late, over your amazing coffee (on a week day anyway).

The menu had multiple fructose friendly options, or easy adjustments, and they genuinely seemed to care that there was nothing in your lunch that might so much as look at you in an inconvenient way.

‘Johnny’ we will be back to enjoy your gracious hospitality and delicious dinning!

The marvels of LITTLE HENRI

Low and behold amazing ALLPRESS coffee north of the usual fitzroy coffee hub! These guys are rocking coffee and all things glorious at little Henri. Service is amazing and their staff go out of their way to help. 4th amazing experience today. I have used the words ‘fructose free’ within the walls of little Henri before and have had responses like, “the chefs housemate is fructose free, he said he could do one of these 5 dishes as a safe option” and “I know how great is our gluten free bread”. Helpful, nice, edible food and excellent coffee! Totally fructard approved!

The Mamasita’n dream!

Nestled in the upstairs of a pretty dingy building in the city, is the epically amazing ‘not so secret’ that is Mamasita. As far as upmarket new age Mexican, they have nailed it. Then there is there service…. It couldn’t be better if you tried. These guys seem to be rocking the ‘knowledgeable, happy-to-be-at-work, I’m-awesome-at-my-job’ combination that makes the Mamasita experience what it is.

We headed in for a surprise Bday… now there are a few things you need to know… (you cant book unless its a table of 8-10, and you have to do set menu, otherwise you can do the walk in option, and most nights of the week at most times your looking at about an hour wait on the stairs smelling the gloriousness that is Mamasita before being seated- so worth either option)… Set menu for us, and what a menu it is!

Upon arrival you are asked if there are any food intolerances amongst the group – 1x vege, 1x fructard…. didn’t phase them. A couple of questions later and the Man-waiter-extraodinaire was totally under control (questions being my preferences, not what is fructose!?). He apologised for the fact that I would not be eating the same meal as the others….. hindsight says he should have apologised to the others as, as far as I’m concerned mine was better…..

Did I mention that when your dining as a walk in, they have an allergy menu. Basically let you know the items on the menu that they can’t remove the following from; dairy/egg/onion/garlic/chilli…. Oh and the whole menu is gluten free already!

Here’s how I went…

Entrée, exquisite~! no other words for it. I was served up avocado salsa with corn chips… I didn’t know you could make it taste that good. The avocado was even served in its own skin… sorry it looked so good it got eaten before I took piccys.

We then moved on to rounds 3&4 -Tacos 6 inch soft shell tortilla with filling & Comida para la familia Shared food for the family

Thank you Mamasita for reinventing my belief in fructose free flavour! I couldn’t recommend this place more highly! We loved coming, and we WILL be back…..

I have been here for another set menu experience before, 5 out of the 10 were food-retarded… 1x vege, 1x dairy/soy/gf, 1x gf, 1xonion free and me….. same experience… no worries…

Cream cheese salmon and capers with scram!!

A deliciously easy breaky/lunch in under 5 minutes?

Scramble an egg with a TSBp of milk (if its taking you more than 2 mins in a hot pan you’ve probably got yourself a solid omelette)

Toast some gluten free bread (I have discovered the ‘country life -gluten free’ range, edible and sandwich worthy)

a nice dolop of lite cream cheese on top

some smoked salmon, plain variety

cracked pepper

and top with a teaspoon of capers
